My first two classes of school are officially over and we are on a 2 week break for the Holiday. I knew things would be intense, but school is a mixture of excitement and stress...which I LOVE!!

The last class we focused on breads and I can say I have found a new love. It amazes me that you take these cheap ingredients, flour and water, and turn it into the most amazing product.

Here a few pictures of things we made the last 3 weeks.

Butter Cookies

My journey into culinary school has begun and so far it’s more exciting than I could have dreamt. I am loving every part of it even wearing my “fancy” uniform each day. We are learning methods versus just recipes, which is really cool.

Last Friday we started baking doing chocolate chip cookies. This was my first time every scaling (weighing them) my ingredients. I thought it was going to be really complicated but it was actually quite easy, and I think I like it better than the traditional method most cooks use. The cookies were very easy to make and we hand mixed everything. This allowed us to get a feel for how the product should actually feel, but it came together really easy.

We used Callets in our cookies which are basically a chocolate morsel, but it’s made with real cocoa butter, unlike the ones we normally buy from the grocery store, which is almost like an imitation chocolate. They melt much better than Hershey's or Nestle chips. They made a HUGE difference in the taste of our cookie, but those Callets are very expensive. I didn’t get a photo of my chocolate cookies, but we will make them again on Thursday for our practical so I will snap a few then.

Last night we made three cookies.

The Strassburger cookies( a traditional butter cookie) with strawberry baker’s jam

The Brysselkex (a Sable cookie) - Which we turned into checkboards.

Biscotti (twice baked cookie) - They were flavored with orange zest and almonds.

Puff Pastry

I can’t not explain how frustrated I get when I get a recipe stuck in my head and things don’t go as planned. I was at Target and came across the November issue of Everyday Food, and saw a section about savory pies. There was a recipe for a Puff Pastry Pie filled with Ham and Gruyere. After drooling all over the pages I knew this had to be my dinner for Sunday, so I set things in motion.

Ran to the grocery store, got some yummy maple glazed ham, pesto jack cheese and off to pick up my pastry puff. Where is the puff pastry, I walked around the store for 15 minutes looking for pastry puff. I finally found someone who worked there and when I asked what section it would be in, he looked at me like I was speaking a foreign language.

What is this puff of pastry you speak of lady…REALLY GUY… according to the 3 stores I called, Puff Pastry is a seasonal product and won’t be on the shelves for another week or two. In what world is Puff Pastry a seasonal item, I mean I love to stuff my face with that flaky goodness all year round. So my whole dinner plan went down the drain.

Has anyone tried making puff pastry from scratch?

Cream Biscuits

I have a lot of cookbooks, but honestly when it comes to baking this has to be my favorite.

Every recipe I have tried from this book has been easy and come out perfect. Last night I was skimming through and decided to try their cream biscuit recipe, which looked easy.

The whole process took less than 25 minutes and most of that was sweeping up the large amount of flour I had somehow dumped all over the kitchen floor.

The biscuits use a limited amount of ingredients, but they make magic. I slathered mine with tons of honey butter and it was a great night.

Cream Biscuits

(From Baking Illustrated)

2 cups all-purpose flour
2 teaspoon baking powder
2 teaspoons sugar
1/2 teaspoon salt
1 1/2 cups heavy cream

1 Preheat oven to 425°F

2 Sift together dry ingredients, then add cream; mix until it holds together.

3 Knead for about 20-30 seconds, then press into 8 in cake pan, turn out and cut with biscuit cutter. (This is important, don't use a glass!!! You need something with a sharp edge to ensure they come out fluffy and high)

4 Bake for 15 minutes. (Better to take them out when they are slightly underdone).

5. Serve immediately

SLATHER WITH HONEY BUTTER, JAM, NUTELLA

Hi Everyone –

Just a heads up our website is currently going through some construction changes, so access will be denied if you try to pull it up. With culinary school starting in a few weeks Dollface Delights will be taking a hiatus from doing business. When it comes to my business I want to ensure I can give it all the attention it deserves.

Once my program is over, Dollface Delights will be back, Bigger, Badder and Sassier!! I still plan to blog (hopefully on more or a regular basis) my new adventure.

BIG CHANGES!

So, a few months back I made a decision to make a change in my life…..

I made an appointment ….

Talked to some people…..

Went home and thought long and hard…..

Cried a few times…..

Went into major anxiety thinking about the changes this decision would cause, with my future, my bank account and my free time….

Cried a few more times…..

Got lots of hugs and reassurance from my loved ones (and a few fur baby kisses from Loco)….

Put a brave face on and decided to sign the paperwork….

Got the call today that things were all in order and I was good to go…..

Today I am a fully enrolled student at the Le Cordon Blue Culinary School…

On November 8, 2010, I will start my journey to be more educated in Pâtisserie and Baking…and my life will change FOREVER!!!

Tru Blood Cupcakes

Last weekend was my sisters birthday so I made her Tru Blood Cupcakes.

She wanted vanilla bean cupcakes, so I dyed them Blood Red and topped them with Chocolate Buttercream. They were a ton of fun!!

I also made a fun beverage to go along with it!! I created a label with a picture I found online and used cranberry juice as the drink!! My sister LOVED it!!

Cake Doughnuts and Fruit Ganache

Over the weekend I got a new Dutch oven and knew it was time to fry something up. When I was younger one of my favorites things to make was a homemade cake doughnuts. I loved that dense cakey doughnut bursting with cinnamon and nutmeg, plus their FRIED!!! I used my old stand by recipe from the Better Homes and Garden Cookbook and set off.

Making these doughnuts is not hard at all, but I love a challenge and wanted to make some type of fruit glaze to top the doughnuts. My first attempt started with some blueberries, milk and powdered sugar. It was looking good until I grabbed the wrong box and dumped almost a cup of cornstarch into it and it tasted like YUCK!!!

So, I moved on to trying a white chocolate strawberry ganache glaze. Now, I understand the basics of ganache and have made it many times. I went searching online for recipes for fruit ganache and pretty much came to a dead end. It seems when it comes to ganache people stick to what they know regular chocolate. I still was curious so I pureed my strawberries, dumped it into my hot cream and then poured it all over my white chocolate.

I think it came out perfect!! It started out very liquidy but after cooling down it started to thicken up. I think I will play around with it a bit more and see if I can make it even thicker, or try other fruit flavors.

The trickiest part of the whole process was making the whole in the middle. I didn't have an actual doughnut cutter, so after cutting them with my biscuit cutter I had to try and find something to poke the hole with. The dough was very sticky and made it way more complicated than necessary. Next on my kitchen gadget shopping list is this!!

Cupcake Wars Season 2

So, I am still freaking out a little bit but wanted to share my exciting news. Yesterday I came across a blog posts about casting for Season 2 Cupcake Wars. I’ve watched the show, and talked much trash about how AWESOME I would be on this show. So I took caution to the wind and sent in my information.

Literally about an hour later, I see some strange number on my cell phone and a voice message. It was the FREAKING casting director from Cupcake Wars. She liked my email and liked the pictures I sent (I mean who could resist this face…LOL) and wanted to chat more about the process. So, I literally almost run off the road and start screaming in the car. (Imagine this scene from onlookers driving by)

I called her back and we talked for about 20 mins, she asked me a ton of questions about Dollface and why I started baking and my business. She said she really liked me, thought I was absolutely adorable and had a great personality. (I’m not making this stuff up people) The next step is to film a short video for the producers of the show so they can see why I should be picked for the show.

Yes…I am still Freaking out!!! So, right now I am in stage 2 of casting and will keep you updated. I have to film my video over the weekend and will posts it on Youtube. I will share the link so you can get a good laugh…LOL!!

I would appreciate your blessings, wishes, magical fairy dust, rain dances…this would be more than a dream come true for me!!

Banana and Nutella

After our post on Cupcake Takes the Cake blog, I found out Rachel one of the bloggers was going to be in Austin. We set up a time meet up this afternoon and I brought our yummy banana cupcakes with super creamy Nutella buttercream to share. It was a fun meeting she is super sweet in person!!

We also took advantage of the lovely day we had and did an fun little photo shot this afteroon. This is my favorite photo from the set.

This has been an exciting week for me and I have another special surprise for this weekend, which I can't wait to share!!!!

Has anyone else noticed the abundance of Cupcake stuff going around lately? The other day I caught the new show Cupcake Wars on the Food Network and really liked it.

It’s a high stakes competition amongst cupcakes bakers. I am going to be honest, I don’t know if I would be worthwhile in such a stressful situation. I give those bakers a major high five for having the guts to compete on such a show.

Butterfly Graduation cake w/ Marshmallow Fondant

After I completed this cake, I had to give myself a pat on the back. The client wanted a fun girly cake for their daughter who was graduating from her senior year in high school. My concern with butterflies was trying to keep it girly, but age appropriate. I also wanted to incorporate her school colors in the design. To make things even more challenging (because I love to stress myself out and make things much harder than they have to be) I decided to try my hand at making my own fondant.

I found a recipe online via CakeJournal’s blog and set in motion. It was surprised how easy the recipe and process was and how much better this fondant taste than store bought. Here is the final cake.

The cake was vanilla bean filled with fresh strawberry mousse with a vanilla buttercream and marshmallow fondant.

I would highly recommend giving marshmallow fondant ago. It’s not as terrifying as it sounds. Below you will find the recipe I used.

Marshmallow Fondant (MMF)

1 bag of white marshmallows (8 oz)
Water (2 tbsp)
Powder sugar sifted (1 to 2 pounds)
Crisco
Heatproof bowl
Spoon
Sift
Food colors or cocoa powder
Flavoring optional

Put the marshmallows in a heatproof bowl and add the water. Put the bowl in the microwave oven and heat it for approx. 2 mins. until the marshmallows puff up like on the photo.

Stir the marshmallows until they get smooth. This is the time where you can add your chosen food color/cocoa powder or give it flavour.

Note: Color the mixture a bit stronger than desired. You can always make the color lighter afterwards by mixing it with white marshmallow fondant.

Now add the powder sugar and stir the mixture with a well greased spoon. Keep adding powder sugar until it looks like a dough. Turn out the “dough” on a greased work board and with your hands greased with Crisco start kneading the marshmallow fondant. Keep adding a little powder sugar at a time until it is not sticky anymore.

Be careful not to use all the powder sugar as to much powder sugar can makes it too dry. It is ready when it feels pliable and ready to roll. If you are not using the marshmallow fondant straight away then rub a bit of Crisco on it and wrap it in cling-film and seal it in a airthight bag.

MY NOTES - **I didn't use a microwave and instead use the double broiler method to melt my marshmallows. I also used 1 and 1/2 bag of Jumbo marshmallows and used my bread dough hook to mix the dough in my Kitchen Aid. Just make sure to oil your bowl and hook when mixing the dough. I had a TON of fondant leftover so I next time I will only use one bag of marshmallows.

S'MORES Cake

I love when clients give me the freedom to create something special for them. I was asked to make a special birthday cake and told to include chocolate and fun. I knew they were going camping over the weekend as part of the birthday weekend, so immediately S’MORES jumped out to me. I created a Chocolate Cake and slathered it with Marshmallow Buttercream, sprinkled crushed graham crackers all over it and topped it with toasted Marshmallows and chocolate chips. I literally had to stop myself from trying to eat the whole thing.

I think this cake could be turned into the cutest cupcakes. I thought I would share the recipe I used to make the Marshmallow Buttercream.

Marshmallow Buttercream

3 - Sticks Room Temp Butter
2 - 7.oz containers of Marshmallow Fluff
1½ Box Powdered Sugar
1 Tblspoon milk

Cream Butter and Marshamallow Fluff until fluffy.
Add 1 half Powder Sugar and Mix
Add Milk
Add 2nd half Powder Sugar (You can add more milk if needed)

*Enough to frost 2 9- inch cakes.

Blackberry Pie Bars

I think one of my favorite things about Summer are the berries. I love walking in the grocery story and seeing heaps of Summer berries, such as Blackberries and Strawberries. The other day at my local grocery story they had Blackberries on sale for 88 cents a carton and my head almost exploded. I bought a ton, but had no idea what I was going to use them for. Well I came across a post from Brown-Eye Baker and instantly knew what my next project was going to be.

This was an amazing recipe and a crowd pleaser. The recipe was very easy to make and my only oversight happened when I realized too late the pan I was using was WAY too small, so some of my filling spilled over and I had a HUGE mess. In the end things turned out perfect and I was left with a great Summer treat.

I would highly recommend eating this with some Homemade Whipped Cream or Vanilla Bean Ice Cream.

Blackberry Pie Bars

Yield: 18 bars

For the Crust and Topping:
Zest of 2 lemons
1½ cups granulated sugar
3 cups all-purpose flour
¼ teaspoon salt
1½ cups (3 sticks) unsalted butter, cubed and chilled

For the Blackberry Filling:
4 large eggs
2 cups granulated sugar
1 cup sour cream
¾ cup all-purpose flour
Pinch of salt
6 cups fresh blackberries

1. Preheat the oven to 350 degrees F. Grease a 9×13-inch baking pan with butter; set aside.

2. In a small bowl, combine the granulated sugar and the lemon zest. Using your fingers, rub the zest into the sugar until all of the sugar has been moistened. In the bowl of a food processor, combine the lemon sugar, all-purpose flour and salt. Pulse a few times to combine. Add the butter and continue to pulse until the pieces of butter are no larger than the size of peas, about 10 to 12 pulses.

3. Measure out 1½ cups of the crumb mixture to use for the topping and put it in the refrigerator until needed. Press the remaining mixture into the bottom of the pan. Bake the crust until golden brown, about 15 to 20 minutes. Let cool for about 10 minutes while you prepare the filling.

4. To make the filling, whisk the eggs in a large bowl. Whisk in the sugar, sour cream, flour and salt until thoroughly combined. Gently fold in the blackberries. Spoon the mixture evenly over the crust and make sure all of the blackberries are in one layer and not sitting on top of one another.

5. Sprinkle the reserved crust mixture evenly over the filling. Bake until the top is lightly browned, about 45 to 55 minutes. Let cool for at least 1 hour before cutting.

Happy Cinco De Mayo everyone! I have to be quite honest I didn’t fully know the meaning behind this holiday, so I did a quick wiki search to get the low down.

“A voluntarily observed holiday that commemorates the Mexican army's unlikely victory over French forces at the Battle of Puebla on May 5, 1862, under the leadership of General Ignacio Zaragoza Seguín . Observed in the United States and other locations around the world as a celebration of Mexican heritage and pride”

So, now that were both informed how about some pretty Cindo De Mayo Cupcakes. I thought I was going to have time to create some magic, but that didn’t happen. So I will let you enjoy some that inspire me!

2010 Texas Burlesque Festival

The 2010 Texas Burlesque Festival was quite an adventure. The house was packed and the performers were Amazing. Our little booth was put in a very awkward space, but we made lemons out of lemonade.

The menu consisted of Chocolate Cupcakes with American Vanilla Butter cream and Chocolate Cooke Truffles. I also made banana whoopee pies with Nutella pastry cream, but somehow they didn’t get photographed. Don't you love the fun Cupcake Toppers to fit the Texas Theme!

(For Some Reason my Nose looks HUGE...LOL)

I love doing these events, because I get to do tons of Networking and meet lots of fun people. Now I am off to plot my next adventure!

Chewy Chocolate Cookies 2.0

A few posts back I tried my hand at Chewy Chocolate Cookies and they were just okay. They filled my chocolate need at the time, but didn't really fill the concept I had envisioned, so I decided to do a re-do on my search for the perfect Chewy Chocolate Cookie. I took a recipe from one of my many cookies, made some changes, forget some things (LOL) and BOOM...perfection!!

These cookies came out beyond my expectations and with my new camera I was able to capture them in all their glory!!

Dallas Burlesque Festival

I am so glad and kind of sad our event is over. We made it to the Dallas Burlesque Festival after tons of hard work in the kitchen, but I think things turned out perfect. After I had everything set up, I kept thinking this set up would have been perfect for a party or wedding. The table had a valentines theme and included tons of hearts.

My favorite creation were the custom cupcake toppers.

Dallas Burlesque Festival

So, I have not fallen off the face of the earth!! DollFace Delights has been invited to participate in the Dallas Burlesque Festival on February 06, 2010.

We are not only going to be vending, but also providing desserts for the performers. I am beyond excited and honored to be part of this exciting event. Right now I am working on my menu, and a purchase I made the other day is going to play a major role in what I make.

The other day I was in Williams Sonoma and saw the cutest little baking contraption. The Heart Pocket Pie Molds. Of course I had to grab it up and think these little pies will be a hit at the event .(especially since Valentine's Day is right around the corner)

I also saw this on their website and think I might do a Red Velvet Whoopie Pie to go along with the pies.

I would love to hear your suggestions and feeback.

Still Bananas

After making the banana birthday cake I still had a few bananas leftover that were about to expire, and needed to whip up something that would utilize them up. I was curious what would happen if I added bananas to my favorite chocolate chip cookie recipe.

I added an additional half cup of flour to the recipe, because I knew the bananas would create more moisture. After baking the cookies they were much softer (the cookies were definitely cake-like!! ) than I expected and due to the bananas they spread during the baking process. I was a little disappointed, but decided to get creative. I whipped up. They were YUM-O (the funny thing is I am not a huge banana eater…LOL).

Cupcake Love!

Not only do I love baking cupcakes, I love collecting cupcake stuff (along with Hello Kitty). In the last year, I've felt compelled to buy it anything cupcake related. When I saw these two cuties I had to make them part of my growing collection.

I got the this amazing cupcake cookie jar from an Ebay seller after seeing it on someone's blog. It was pretty good size, so I can't wait to stuff it with tons of sweets...maybe I will make some cupcake cookies to put in there.

The tissue paper and notepad came from Target. They have the best cupcake stuff there, and I love the fact that most of it is in their dollar bin.

Bananas for your Birthday!

Yesterday was my darling BF birthday; you can read a little bit more here (if your curious). Well we are on this lose weight eat better kick, so baking lately has been strictly for clients. The BF kept saying I don’t want a cake, but what kind of baking mama would I be, if I didn’t surprise him with some yummy goodness.

The flavor idea came to me in the middle of traffic, so I had to do an illegal u-turn and almost take out a bird to make my way to the grocery store to pick up the supplies. From the start this cake was nothing but trouble. Since it was last minute, I didn’t have my butter soften so I had to improvise and then I kept dropping yolk in my egg whites. After almost pulling out all my hair (and this is really expensive hair…LOL) I decided to just mix everything together and shove it in the oven.
30 minutes and 350 degrees later I had a yummy moist banana cake. I filled the cake layers with a banana buttercream with chunks of bananas. Then I slathered it all up with some delicious semi-sweet ganache frosting. The cake came out so delicious and the BF was surprised and happy. We each ate (some people being better than others…NOT ME!!) a piece of cake and he took the rest with him to work to share with his co-workers

I realized after making this cake, how much I really enjoy baking and making delicious things to eat. What I mean by this, I love to see pretty cakes in all their fondant glory, but I personally just love yummy cakes slathered in yummy frostings. A little color, maybe some fun sprinkles, but just simplicity. The kind of cakes you remember your grandma making.

I use to struggle with trying to create cakes that would make the Cake Boss proud, but I realized for me, I would rather see someone smile, because they love the way my cake taste, verus how pretty is it. Maybe that is strange logic, but I am strange and from this day forward, I have vowed to put my efforts into creating the best tasting cakes I can. This means, not beating myself up anymore, because I can't make a stupid fondant rose or create perfect little hand piped decorations. My creations will be just as fun, yummy and whimisical as I am!

Ho Ho Ho

I hope everyone had an enjoyable Christmas (or day you celebrate with your loved ones) as I did. The BF showered me with amazing gifts and I made way too much food for two people, but it was a wonderful few days. For our desserts I wanted to make something that would be small enough for us both to enjoy but not have a ton leftover. I decided to create one of my favorite retro treats Hostess Ho Ho’s.

I started out with a rich Devils Food Cake filled it with lush vanilla marshmallow cream and covered them in milk chocolate ganache with a strip of marshmallow cream on top. I found the easiest thing to do was put the batter in my cupcake tins, but only half way to get a flat top. I also put a mini cupcake liner at the bottom to help the cakes from sticking, but that plan didn’t work out as I had planned. The liners and the batter got mixed together, but luckily I was able to pull them off, plus they didn’t help the cakes from sticking, as a few stick in the pan and fell apart as I was trying to pull them out. So after being super frustrated for losing half my cakes and eating most the marshmallow cream (to relive the stress…LOL) my final outcome was this…..

I've also been thinking about my blog photos. There are quite a few blogs I stalk that have amazing pictures, check out one of my blog loves Pink Sugar Dessert and you can see what I am talking about. Last Christmas my BF got me an amazing Sony DSLR, but Its always easier for me to grab my little Fuji to shoot my pictures (losing quality sometimes). Well my goal for 2010 is to focus on creating lovely pictures for my blog.

I’ve decided to do a series of post about “Growing your Business” . I thinks its very important as a small business owner to find ways to make your business grow into a healthy success.

The other day I received an email from The Wedding Party Studio to see if I would be interesting in marketing my business through their company. I meet up with a rep and everything sounded great, and the advertising prices are very competitive with those in the areas, but I am still pondering if it’s a good fit for me.

This got me thinking about how to market your business. I’ve read a lot of article where small business have relied on social networking sites, Twitter, Facebook…etc to get the word out about their business. I have both, but I can honestly say the amount of business I get from these sites is relatively small (maybe I am not doing it right). The majority of my business seems to come from word of mouth or from people who have sampled something at an event I have participated at.

I really want to make successful changes with my company in 2010, and advertising and marketing is something that has been on my mind A LOT. I want to ensure I get the most for my money, but I also want to make sure I am using outlets that reach my target market (I mean advertising in “Prison Weekly” maybe cheap, but not so effective). The other issue is with edible creations you can have the best advertising, but people are going to want to taste your goodies before making a decision.

I am learning that good marketing and advertising is essential to the success and longevity of any business. I would love to know your thoughts, opinions and feedback. Also if your in business, how do you market your company.

Chewy Chocolate Cookies

Last night I was craving something sweet, but at the same time feeling very L-A-Z-Y, so I browsed online to find something to fill my need. I came across this recipe for Chewy Brownie Cookies. I decided to go with this recipe, because it was easy, included chocolate, I had a box of brownies stashed in the back of my pantry, and it included chocolate.

I totally support the Bake from Scratch movement, so I really had to talk myself into this project. I am strong believer that it takes just as much time to make something from scratch as to use a box. But we already established I was feeling L-A-Z-Y. So I mixed, poured, measured and shoved it all in the oven. Here comes my disappointment, when I pulled the cookies out they looked nothing like I expected. They were flat and lifeless, and just plain sad looking. So I got creative and smooshed them together and sprinkled powder sugar on them and set out to taste them. OH MY CUPCAKE ( OMC), these cookies were so gooooooooooooooooooooooooood. They were crispy, fudgy, chocolately and chewy…just what I wanted. I guess it’s good to have that mentality “When you’re stuck with Lemons, make Lemonade…instead of getting mad and pouring it all in the trash….LOL”.

Here is the recipe:

What you'll need:
1 - box of fudge brownie mix (19.8 oz)
1/2 cup flour
1 large egg
1/2 cup water
1/4 vegetable oil
3/4 cup confectioners sugar

How to:
In a mixing bowl, combine brownie mix, flour, egg, water and oil; mix well.

Place confectioners' sugar in a shallow dish. (if you let the dough sit for about 15 minutes before dropping it, then it will make it much easier to handle) Drop dough by tablespoonfuls into sugar; roll to coat.

Place 2 in. apart on greased baking sheets. Bake at 350 degrees F for 8-10 minutes or until set. Remove to wire racks.

After seeing my boyfriend's shirt, I knew the cookies were a SUCCESS!!!

I’ve been on a slight Baking Break (I know crazy!!), but I am finishing up my winter classes (for those who didn’t know along with building my Dessert Empire, I am also completing a graduate degree) and thought I would take a few weeks to re-strategize my game plan. I have some huge plans for DollFace Delights in 2010 and I can’t wait to implement them.

With the Holidays chugging along, I’ve been asked by several people what I want for Christmas. Now, I will be honest I am the type of person who hates to wait (I was not born with patience) so when I want something if I have the means to get it, I just get it! So, it’s been kind of hard thinking of Christmas gifts for others to get me, but came up with a few. Of course, they are all baking related…LOL!!

Cake Flour

I’ve been gone for a few days visiting my family in Missouri and had so much fun! While I was out there my mother had mentioned something about the cost of cake flour up there. I almost died when she told me that cake flour was only $1.49 a box, where as here in Texas its almost $2.50 a box.

I decided to do some bulk shopping and stock piled on cake flour. To my surprise the cake flour they were selling was by Pillsbury called Softasilk,

That was my first time every seeing this product. When I go shopping for my baking supplies the only kind of cake flour I ever see is Swan’s Down.

Do you guys know of any other cake flour brands I should be keeping an eye out for? I would love to know what other brands are out there.

When I got to the register the lady ringing me up, made the comment that you can use all-purpose flour plus cornstarch if you don’t have cake flour on hand. Knowing that baking is an exact science I am so scared to use substitutions. I’ve read many articles and blog post offering substitutions when you don’t have something on hand. My concern is always that my product will not come out as good as it should.

I also picked up a ton of Holiday Baking guides and can’t wait to try out some new holiday desserts. On Thanksgiving on the drive to Missouri we stopped at this amish bakery in Oklahoma. It was filled with comfort desserts, no frills and nothing fancy. We picked up several pies to take home and they were so yummy. I am not a big fan of pumpkin pie, but there pie was so creamy and very light on spice. I’ve made a note to make a “pie” stop everytime I go home!!

I’ve had a whirlwind weekend full of baking, cupcakes, weddings and frosting (which I am finding is a very good hand moisturizer…LOL!!) To highlight the first order of the week was for the birthday party of a soon to be 10 year old girl. They were doing a carnival theme and wanted something fun to coincide with the party. Well we aim to please and created some fun “Sno” Cone Cupcakes with custom cupcake toppers. The cupcakes were vanilla and chocolate with a vanilla bean butter cream. They were a ton of fun!!

(A SPECIAL ONE FOR THE BIRTHDAY GIRL)

Next up was the “Soza” wedding and being the trendy couple they were they decided to sans a huge wedding cake and just go with different flavors of cupcakes. Well initially I had planned to use cupcake stands, but after taking to the bride I found that we were being given a small 8’ round table to use. We decided to improvise and everyone loved the way the set up came out. So guess would know what the different flavors were for the cupcakes, we created custom cupcake toppers and a fun menu to identify the cupcake flavors.

The weekend was so exhausting, but seeing the smiles on my clients face is the reason I love to do this work. Now I am preparing my dessert menu to bring to my parents house for Thanksgiving, and I have no idea what I am going to make. Any ideas?

In other news I've been working the last couple of days on creating some personal touches for the cupcakes I have over the weekend. I want to show pictures so badly, but will use my will power and wait until I am finished to show the final products, while crafting I have learned the following:

DIY Cupcake Stands

In the next week I have to make 200 cupcakes for a wedding, so I’ve been looking for a cute way to display them. I came across some cute DIY cupcake stands that I had to share.

Supplies Needed:

2 terra cotta saucers (I used a 7” and a 10” saucer, but you can use any size you like)
2 terra cotta rose pots (The pots I used are 5” and 6” high. You can use any size as long as they are taller than the height of your cupcake and frosting.)
2 yards ribbon (or what ever it takes to make it around the circumference of your saucer)
Decorative or scrap book paper
Acrylic paint
Hot glue gun and glue sticks
Sponge paint brush
Scissors

I also found steps on making a simple cupcake stand to showcase just one cupcake or dessert at a time.

Small Glass Dome (you could use one of those glass candle holders)
Very Strong Glue

*It looks like you could find all of these things at a yard sale or thrift store.

Its funny how things work out sometimes. As soon as I posted about the amazing beater, my local bakery shop left me a message to tell me they had more in stock. Of course I stopped what I was doing and ran out to grab one. The one they were selling was a little different than the one I found online, but its pretty much the same concept.

I had no problems fitting it onto my 6qt Kitchen Aid, as it is the same size as my normal paddle mixer. Its seems to be made of a high quality plastic. The style I purchased has a spaulta like tool all around the paddle.

It was cold and rainy today, so I decided to test this baby out with cookie dough. The beater does scrape as it mixes, but with the cookie dough I felt that it smooshed it up against the bowl. Once I was done mixing it, I still had to go back and try to scrape it off the sides. I think the beater was created to use with thinner batters, such as cake mixes.

Oh and this is what you look like when you turn on your mixer at high speed with flour in the bowl. (I got a new haircut over the weekend....what do you think?)

Right now I feel as though I can't make a strong recommendation, because with the cookie dough it didn't really work as I had expected. Next time I making a cake I will try it out and see if it does a better job. I really want to like this, because the concept is ideal. Also, I paid $29.99 for mine plus tax..

I think I need this!!!

The other day I was in my local Baking Supply Store and saw the most amazing thing. Have you ever seen a product that totally makes you want to scream and jump in the store with no fear of people stopping and staring at the strange person making a complete fool of themselves. Well when I saw this product that was my exact reaction. Its called the “Side Swipe Spatula Mixer Blade”.

Basically what it does, while mixing it also scraps the bowl at the same time…simple but genius. I wanted to order it ASAP, but my bakery store advised me they sold quicker than they could stock the shelves.

Well thanks to the Internet Gods (and Goddess) I found the website that would allow me to order mine. I can’t wait to test this baby out, because there is nothing worse than that flour that just doesn’t get mixed in.

Cookbooks to check out!

A few weeks ago I did a post about my favorite food related movies and thought today I would do some of my favorite baking cookbooks. I have about 4 bookshelves jammed packed with cookbooks, mainly for sweets and I am always on the search for new ones. For me there is nothing better than snuggling up with a colorful cookbook, chock full of recipes and ideas to get my baking mojo going.

Here a short list of my new favorites:

Sticky, Chewy, Messy, Gooey Treats for Kids

This is a fun book that has recipes that allows kids to be hands on with the baking and cooking process. Even though I don’t have kids (I am very much a kid at heart) the recipes still looked very yummy and colorful pictures would be attractive to any age.

This is the first book written by Jill O’Connor and the one that got me hooked. Its full of recipes that make you want to just lick the pages!!!

Martha Stewart Cupcake Book

I am a HUGE Martha Stewart fan. I mean anyone who can survive jail, and come out wearing a smile and pearls is okay in my book. Every time she releases a book I am on a mission to rush out and get it. When I heard this book was being released, I had to stop myself from camping out in front of Barnes and Nobles to be the first one to get it. The pictures are truly amazing and there are so many different recipes to choose from. I also like at the end of the book how she provides cute ways to package your cupcakes. This book is truly a dream for me. Martha Stewart + Cupcakes = A happy me!!! (I would also recommend checking out the Martha Stewart Cookie Book too)

Birthday Cakes: Recipes and Memories from Celebrated Bakers

This book is so fun, along with wonderful recipes by very well knows bakers; they each share a story about why they choose that recipe. Who ever styled the book did a great job; there are a ton of little details like colorful cake liners and long French candles. I think I spent a whole day looking at the pictures and then I went back and read the book. I mean just look at the cover and that will give you an idea of what your in store for inside.

The Farm Chicks in the Kitchen

This is another book I stumbled across in the bookstore. I very much judge books by their cover and this cover had me intrigued. I decided to flip through the book on the drive home, and I sat in the car until I finished the whole book. This is a really good book, not only filled with recipes (of all sorts) but also craft ideas. After I read this lovely book I sent the authors an email to tell them how great I thought it was, and they responded back to me the next day with a very warm Thank-You. This book reminds me more like a family scrapbook, its filled with great stories, family pictures.

Baby Shower Cake + Chocolate Chip Cookies

I received an email last week with the subject title “DIRE NEED”. At first I thought It was spam so I was a little leery of opening it, but when I saw the email address was @HelloKitty.com it sparked my interest. It was a legitimate email from someone who needed a baby shower cake by Sunday. I was up for the challenge, and was given the basic info of Chocolate cake for a Halloween Themed Baby shower. I also found out that the mother-to-be was a huge fan of the Sanrio character Badtz Maru. Now, I myself am an insanely huge fan of Hello Kitty, so I was super excited to be commissioned to do this cake.

The cake was our All-American Chocolate Cake with a Ganache Filling and Vanilla Bean Buttercream. I felt that all of the requests were incorporated in the final requests of the cake. They were super happy with the end result and so was I.

Also, I was flipping through Cooks Illustrated and came across their chocolate chip recipe. It promised a chewy cookie with crunchy edges and a nice toffee taste. Now, I have my own secret chocolate chip cookie recipe, but thought I would go out of my element and try something new. I was highly disappointed. I really want to like this recipe, but to start it was soooooooo time-consuming. There is a process of adding the melted butter and sugar and mixing it for 3 mins, letting it rest for 30 mins and then doing this process 3 more times.

Are you Crazy…who has time for all of that?

When the cookie was baked I didn’t like the way it looked. None of the chocolate chips rose to the top they were all sunken in, and who wants a flat cookie.

Now my taste testers said the cookie was good, but when it comes to baking good is not good enough for me. I want WOWZA,YIPEE or DYNIMATE, so yesterday I went back to my standard recipe and threw in some almonds and pecans and was happy again (along with being stuffed with warm chocolate chip cookies)...

Bite Fest 2009.

The 2009 Bitefest in San Antonio was a very interesting event. We created tons of spooky goodies to sell at the DollFace Booth.

Muffins in my Tummy!

When I set out on my task of creating a perfect muffin, I do what I always do…tons and tons of RESEARCH! I found many methods, recipes and how to’s on creating a tender soft muffin. I armed myself with my notes, tons of eggs, butter and sugar and went to work.

What I ended up with was an Amazing Banana and Chocolate Chip Muffin and a Lemon Mixed Berry Muffin (I totally forgot to take a picture of these, but they were berry-rrfic.) All the muffins came out soft and yummy and I had to stop myself from eating them all.

(Okay, so I took a small little nibble)

The muffins were made for a charity breakfast, so as much as I wanted to hoard them all for myself, I packaged them off and sent them on their way.

Tonight on the agenda is Cake Balls, Cupcakes and Brownies for the Bite Feast on Saturday. I am even thinking if I have time of adding Candy Apples to the menu. Ya, thats right Candy Apples. My younger sister is the Queen of the Candy Apples and she makes the best ever ( I will have to see if I can make her proud). I love the sweet crunchy red coating and then biting into the crisp tart apple...just drooling thinking about it!

Chocolate Cake!!

This weekend the DollFace team took on the project of making a Girl Scout cake. I think it came out perfect. It was a chocolate fudge cake, with vanilla bean Buttercream and fondant decorations.

I’ve been making so much chocolate cake the last fee weeks, which I wanted to make sure I had a recipe that I could be proud of. Well after making some tweaks and adjustments I created the All American Chocolate Fudge Cake. After making the Girl Scout cake, I made an extra cake and I had to stop myself from eating it. I made chocolate fudge frosting to go with the cake, and sprinkled some fun confetti on it and it was ready for tasting.

OMC, (aka. OH MY CUPCAKE, for those who don’t know) The cake was so moist and has the best fudge chocolaty taste. I love creating recipes and as our motto says, “Mixing the rights, the right way, to create perfection”.

This weekend I am setting up a booth at the Bite Fest in San Antonio, so I am thinking of whipping up some Halloween theme cupcakes and sugar cookies. I can’t wait to post some pictures.

Last but definitely not least, the winner of our Chic Cupcake Challenge is the Fabulous Miss Dot!!!

I know I am behind the curve with this movie, but I got "Waitress" the other day in my Netflix haul and loved it! I loved the creative pies she came up with and how they were wrapped around the drama going on in her life. I also was in LOVE with her diner at the end LuLu's.

It got me thinking of other movies that I love that deal with food. So, I compiled a short list of recommendations:

1. Like Water for Chocolate - is an amazing foreign film about Tita who is only able to express her passions and feelings through her cooking, which causes the people who taste it to experience what she feels

2. Simply Irresistible - Sarah Michelle Geller plays a non-foodie who has a spell cast on her to allow her to make foods that are irresistible. A common theme noted in most of my picks is the fact that whatever emotion the cook is experiencing while cooking, the person eating also experiences it.

Lucky for me, I've never made anyone weep from one of my desserts, but I have heard cries of joy (LOL) .

In other news, over the weekend I did some fun photos with a Ft. Worth photographer named Miss Missy. I wanted some photos that would represent my love of things Vintage and of course Baking. Miss Missy went beyond my expectations. The plan is to use the photos on new marketing material, but I had to share just one!!

Chic Cupcake Challenge Entry

This morning I am exhausted, but for a good cause. Last night I finished my entry for the First Chic Cupcake Challenge and I couldn’t be more pleased. Fall is my favorite season and here in Texas it sometimes can feel like we have three seasons, Warm, Hot and Holy Jalapeño. Well it’s been in the cool 60’s the last few days, full of cool air and rainy nights, and its perfect.

My entry for the Cupcake Challenge includes a Devils Food Cupcake filled with a Salted Caramel Ganache and frosted with a milk chocolate ganache. Its chocolate heaven!! Perfect to enjoy curled up on the couch wrapped up in your favorite blanket. The cupcakes have been topped off with some fun maple and oak fondant leaves.

Devils Food Cake:

1 cup unsalted butter

2 1/2 cups sugar

2 cups boiling water

1 cup cocoa powder

4 eggs 1 tablespoon chocolate extract

2 3/4 cups cake flour

2 teaspoons baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

Preheat oven to 350 degrees.

In a large bowl beat butter sugar, eggs and chocolate extract together. Alternately beat in the dry ingredients and the chocolate mixture. beat just until blended, do not over mix. Pour batter into the cupcake pans and bake for about 30 minutes or until a cake tester comes out clean. Remove cupcakes from oven and allow them to set for 3-5 minutes

Salted Caramel Ganache

2 cups sugar

1/3 cup water

4 cups cream

1tsp Fine Sea Salt

To prepare the ganache, place the sugar and water gently into a large sauté pan and cook without stirring or moving until any part of the mixture turns brown. Swirl to even the color and cook until golden brown. Carefully add 1 cup of the cream and cook until the mixture turns into a sauce consistency. Remove from the stove and cool. Add the remaining cream and chill completely. To finish the ganache, place in a mixer fitted with a whip attachment and whip until the ganache hold a soft peak.

Fill Cupcakes with Salted Caramel Ganache and plug holes to frost later.

Chocolate Ganache Frosting

8 ounces (227 grams) semisweet or bittersweet chocolate, cut into small pieces

3/4 cup (180 ml) heavy whipping cream

2 tablespoons (28 grams) unsalted butter

Melt chopped chocolate in bowl under simmering water. Pour cream over chocolate and continue simmering until melted. Remove the melted mixture and whip butter. Put in fridge to get frosting consistency.

Its time to have some FUN!!! I along with Rhiannon from Pink Sugar Desserts would like to introduce our first ever contest “The first ever Chic Cupcake Challenge”.

There are so many wonderful cake/cupcake artists out there, and we think its time for some healthy competition, plus PRIZES…and who doesn’t like PRIZES?

Create a cupcake recipe based on a Fall/Autumn theme, post the recipe and pictures on your own blog, and then link it up here and at Pink Sugar so that everyone can check out your post. After a week of keeping Mister Linky open (check out Pink Sugar Dessert for the link), we will open the polls for the voting to begin on entered posts. We will also be posting pictures on the Chic Cupcake Challenge Flickr page.

Voting will last for 3 days and a Chic Cupcake Challenge winner will be crowned.
