Last night I was craving something sweet, but at the same time feeling very L-A-Z-Y, so I browsed online to find something to fill my need. I came across this recipe for
Chewy Brownie Cookies. I decided to go with this recipe, because it was easy, included chocolate, I had a box of brownies stashed in the back of my pantry, and it included chocolate.
I totally support the Bake from Scratch movement, so I really had to talk myself into this project. I am strong believer that it takes just as much time to make something from scratch as to use a box. But we already established I was feeling L-A-Z-Y. So I mixed, poured, measured and shoved it all in the oven. Here comes my disappointment, when I pulled the cookies out they looked nothing like I expected. They were flat and lifeless, and just plain sad looking. So I got creative and smooshed them together and sprinkled powder sugar on them and set out to taste them. OH MY CUPCAKE ( OMC), these cookies were so gooooooooooooooooooooooooood. They were crispy, fudgy, chocolately and chewy…just what I wanted. I guess it’s good to have that mentality “When you’re stuck with Lemons, make Lemonade…instead of getting mad and pouring it all in the trash….LOL”.


Here is the recipe:
What you'll need:
1 - box of fudge brownie mix (19.8 oz)
1/2 cup flour
1 large egg
1/2 cup water
1/4 vegetable oil
3/4 cup confectioners sugar
How to:
In a mixing bowl, combine brownie mix, flour, egg, water and oil; mix well.
Place confectioners' sugar in a shallow dish. (if you let the dough sit for about 15 minutes before dropping it, then it will make it much easier to handle) Drop dough by tablespoonfuls into sugar; roll to coat.
Place 2 in. apart on greased baking sheets. Bake at 350 degrees F for 8-10 minutes or until set. Remove to wire racks.
After seeing my boyfriend's shirt, I knew the cookies were a SUCCESS!!!
